Beer Beef Fajitas
Ingredients
- 2 pounds beef round steak
- 2 packets (1.27-ounces each) fajita seasoning mix
- 1 onion, thickly sliced
- 2 green bell peppers, sliced into 1/2-inch strips
- 1 red bell pepper, sliced into 1/2-inch strips
- 1/2 cup beer or water (I used a summer ale - one of Brandon's home brews)
Directions
Rinse steaks with cold water and pat dry with paper towels. Season both sides of steaks with 1 packet of fajita seasoning. Slice into strips; set aside. Add vegetables to a 5-quart slow cooker. Toss with remaining packet of fajita seasoning (and a little salt). Add steak strips on top of vegetables. Pour in beer. Cover and cook on low setting for 8 to 10 hours.
Serve hot with peppers, warm tortillas, refried beans, and shredded cheese, if desired.
Personally, I think you could omit most of the beer/water from this recipe. We couldn't taste any beer flavor when it was finished, and I felt like there was WAY too much liquid with the fajitas. I had to strain them twice before serving. The meat and vegetables contain more than enough water to keep the food moist in the cooker. Adding to much liquid to crock pot recipes tends to dull the flavor of the food.
Also, I wouldn't leave the fajitas in the crock pot for more than 8 hours (the recipe says 8-10). Our fajitas cooked on low for 9 hours, and the peppers and onions were pretty mushy. The meat was fantastic though! It melted in your mouth! Yum!
We really didn't need much for toppings with this recipe. It was pretty good on it's own. However, I might try to add more spice to it the next time I make it. It tasted REALLY good with some hot sauce added on the tortilla. I'm thinking just a bit of cayenne pepper would do the trick! ;)
