What Do Vegetarians Eat for Lunch?

Turns out, they eat a lot of things.  Or should I say WE eat a lot of things.  I am in my third week of being a vegetarian, and LOVING it!  Here's what I had for lunch today:

Quinoa Chick Pea Salad

1 cup quinoa
2 cups water
1/8 tsp salt
1 cup canned garbanzo beans (chickpeas), drained
1 tomato, chopped
1 clove garlic, minced
3 tablespoons lime juice
1 TBS olive oil
1/2 teaspoon ground cumin
2 green onions
1/2 bunch of cilantro, chopped
 
  1. Place the quinoa in a fine mesh strainer, and rinse under cold, running water until the water no longer foams. Bring the quinoa, salt, and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, 20 to 25 minutes.(You could also cook it in a rice cooker the same way you cook white rice).
  2. Once done, stir in the garbanzo beans, tomatoes, garlic, lime juice, and olive oil. Season with cumin, salt, and pepper. Sprinkle with chopped fresh cilantro to serve.

This dish was perfect for me.  Quinoa and chick peas are two of my new favorite foods, and I've always loved tomatoes, onions, lime juice, and cilantro, especially in combination.  I added some steamed collard greens too, for some extra nutrition.  Yum!

I've been feeling great lately.  I feel more alert, less sluggish, and just all around happier.  The question I get most often is about where I get my protein.  It doesn't bother at all me when people ask.  I know that means you love me. :)  Honestly, I know more about protein now, how much my body needs on a daily basis, and I'm more aware of how much I'm getting each day.  Since I've never been a big meat eater, I'm probably actually getting MORE protein than I was before, simply due to awareness.  I eat lots of quinoa, a variety of beans, lentils, leafy greens, whole grains, nuts, and nut butters...all great sources of protein.  I bought my first little brick of extra firm tofu this week too.  Can't wait to give that a try!  I am loving the endless combination of yummy fruits, veggies, and whole grains.  I also love knowing that not only am I putting healthy things in my body, but the way I'm eating is also better for the environment.  My family has been trying new, healthier foods too.  It's a win, win, win! :)
